Justin IgloliorteChef Justin Igloliorte, an Inuk from Nunatsiavut, began cooking at a young age, out of necessity: one time when his mother said she didn't have the time to make his favorite “black bottomed muffins," he decided to just try it himself! This early foray into baking sparked a lifelong interest in the culinary arts. Igloliorte attended Holland College in P.E.I. and after finishing the Culinary Institute of Canada program he traveled east to Halifax and Ottawa, gaining experience in a number of different restaurants and developing his skills in the the art of cooking. Within a few years Justin moved to St. John’s, where he worked in the restaurant industry and with a high end catering company before joining the team at Basho Restaurant and Lounge, which would lead to his first Chef position.
One of Justin's formative experiences as an Inuit chef has been his work in the Torngat Mountains National Park, located on the Labrador Peninsula at the northern tip of Newfoundland and Labrador. Over several seasons in the Park Justin worked with Parks Canada to develop the culinary side of the new tourist attraction, using local and traditional ingredients mixed with modern techniques and flavours to create a culturally inspired taste experience.
